Spaghetti All'Assassina

ATK's viral "assassin's spaghetti" from Bari, Italy -- raw spaghetti cooked directly in a sizzling tomato-garlic-chile broth, intentionally charred until deeply crisp on one side. Bold, spicy, and unlike any pasta you've made before.

Ingredients

  • 6 cups water
  • 1/4 cup tomato paste
  • 1 tsp sugar
  • 1/3 cup plus 2 Tbsp extra-virgin olive oil, divided
  • 2 cloves garlic, minced
  • 1/2-3/4 tsp red pepper flakes
  • 1 cup tomato passata
  • 1 3/4 tsp table salt
  • 12 oz spaghetti

Instructions

  1. Whisk water, tomato paste, and sugar in a saucepan. Bring to a simmer over medium-high heat, then reduce to low to keep warm.
  2. Heat 1/3 cup olive oil, garlic, and red pepper flakes in a 12-inch nonstick skillet over medium until garlic is golden, about 2 minutes. Stir in tomato passata and salt; cook until thickened, about 4 minutes.
  3. Add spaghetti in an even layer and increase heat to medium-high. Add tomato broth 1 cup at a time, cooking and pushing between strands until mostly absorbed before adding the next cup, about 20-25 minutes total.
  4. Increase heat to high and cook without moving until the underside is deeply browned and crisp with some charred strands, 3-5 minutes. Drizzle with remaining 2 Tbsp olive oil and serve immediately.
