Cast Iron Steaks with Herb Butter

America's Test Kitchen's foolproof method — thick-cut strip steaks seared in a blazing-hot cast-iron skillet for a perfectly even crust, then topped with a compound butter of shallots, parsley, chives, and garlic that melts into every bite.

Ingredients

  • 2 (1-pound) boneless strip steaks, 1 1/2 inches thick
  • Kosher salt and pepper
  • 4 tbsp unsalted butter, softened
  • 2 tbsp minced shallots
  • 1 tbsp minced fresh parsley
  • 1 tbsp minced fresh chives
  • 1 garlic clove, minced
  • 2 tbsp vegetable oil

Instructions

  1. Salt the steaks and let sit at room temperature for 30 minutes; preheat oven to 500F with a cast-iron skillet inside.
  2. Combine softened butter, shallots, parsley, chives, garlic, and 1/4 tsp pepper in a bowl; set aside.
  3. Pat steaks dry, season with pepper, and sear in the hot skillet with oil, 2 minutes per side over medium-high heat.
  4. Reduce heat to medium-low and flip every 2 minutes until steaks reach 120-125F for medium-rare, about 7-9 minutes.
  5. Transfer to a carving board, dollop herb butter on each steak, tent with foil, and rest 5-10 minutes before slicing.
