Ingredients

  • 1 lb dried cavatappi pasta
  • 1 lb boneless skinless chicken thighs, cut into bite-size pieces
  • 2 tbsp ranch seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil
  • 16 oz low-moisture mozzarella cheese, grated
  • 16 oz Colby Jack cheese, grated
  • 8 oz cheddar cheese, grated
  • 4 oz smoked Gouda cheese, grated
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 12 oz can evaporated milk
  • 2 cups heavy cream
  • 1 tbsp Dijon mustard
  • Hot sauce, to taste
  • Chopped chives, for garnish

Instructions

  1. Preheat oven to 350 F. Butter a 9x13-inch baking dish. Cook cavatappi in salted boiling water until al dente; drain and set aside.
  2. Season chicken with ranch seasoning, garlic powder, onion powder, chili powder, smoked paprika, cayenne, salt, and black pepper. Heat olive oil in a skillet over medium and cook chicken until done, 3-5 minutes. Set aside.
  3. Melt butter in a large skillet over medium. Add smoked paprika, salt, garlic powder, and pepper; cook 30 seconds. Add flour and cook into a thick paste, 3-5 minutes. Whisk in evaporated milk gradually, then heavy cream and Dijon mustard; cook until thickened, about 5 minutes.
  4. Reduce heat to low and gradually whisk in 5 cups of the grated cheese blend until smooth. Stir in cooked cavatappi and buffalo chicken until completely coated. Layer pasta and remaining cheese in the baking dish, ending with cheese on top.
  5. Bake 25-30 minutes until bubbly. Broil 2 minutes until golden. Top with hot sauce, ranch seasoning, and chives.
