Broccoli Cheddar Gnocchi Soup

Delish's next-level comfort food — classic creamy broccoli cheddar soup made heartier with pillowy gnocchi cooked right in the pot. Rich with sharp yellow cheddar, a touch of Dijon and nutmeg, ready in 35 minutes.

Ingredients

  • 4 Tbsp unsalted butter
  • 1 large yellow onion, chopped
  • Kosher salt
  • 3 cloves garlic, finely chopped
  • 3 Tbsp all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 1 pkg (12 oz) broccoli florets, coarsely chopped
  • 1 pkg (1 lb) fresh or frozen gnocchi
  • 2 cups whole milk
  • 4 oz cream cheese, softened
  • 12 oz sharp yellow cheddar, shredded (about 3 cups)
  • 2 tsp Dijon mustard
  • 1/4 tsp grated fresh nutmeg
  • Freshly ground black pepper
  • Chopped fresh parsley for topping

Instructions

  1. In a large pot over medium-high heat, melt butter. Add onion and a pinch of salt; cook until softened and browned in spots, about 7 minutes. Add garlic and flour; cook until fragrant, 1 minute.
  2. Add broth, broccoli, and 1/2 tsp salt. Bring to a boil. Stir in gnocchi, reduce heat, and simmer covered until broccoli is tender, about 5 minutes. Add milk and simmer until slightly thickened, about 5 minutes.
  3. Reduce heat to low, add Dijon and nutmeg, then gradually stir in cheddar until melted and smooth, about 3 minutes. Season with pepper and salt to taste.
  4. Divide among bowls and top with more cheddar and parsley.
