Cheesy Barbacoa Biscuit Bake

Delish's smoky comfort casserole — beef chuck slow-cooked in chipotle, fire-roasted tomatoes, and spices until melt-in-your-mouth tender, topped with golden biscuits and melted mozzarella. A pressure-cooker weeknight dinner that feels like a hug.

Ingredients

  • 1 can (14.5 oz) diced fire-roasted tomatoes
  • 3 chipotle chiles in adobo sauce
  • 5 cloves garlic, peeled
  • 2 Tbsp tomato paste
  • 2 Tbsp white vinegar
  • 1 Tbsp dried oregano
  • 1 Tbsp ground cumin
  • 1 Tbsp onion powder
  • 2 tsp ground coriander
  • 3 lb beef chuck roast, cut into 2-inch cubes
  • 2 tsp kosher salt
  • 2 tsp extra-virgin olive oil
  • 1 tube (16.3 oz) refrigerated biscuit dough (8 biscuits)
  • 1 1/2 cups shredded mozzarella
  • Chopped cilantro, onion, sour cream, and lime wedges for serving

Instructions

  1. Blend tomatoes, chiles, garlic, tomato paste, vinegar, oregano, cumin, onion powder, and coriander until smooth.
  2. Season beef with salt. Set pressure cooker to Saute, add oil, and brown beef in batches, 2 to 3 minutes. Transfer to a plate.
  3. Add tomato mixture and 1/3 cup water to pot, scraping up browned bits. Return beef to pot. Seal lid and pressure cook on high for 1 hour.
  4. Natural release for 12 minutes, then quick release. Preheat oven to 375F.
  5. Transfer beef to a bowl and shred with 2 forks. Skim fat from liquid, add 1 cup liquid to beef, and mix.
  6. Transfer to a 13x9 baking dish. Arrange biscuits on top.
  7. Bake until biscuits are golden and risen, 23 to 25 minutes.
  8. Sprinkle with mozzarella and bake 3 to 5 minutes more until melted. Cool 5 minutes.
  9. Top with cilantro and onions. Serve with sour cream and lime.
