Oven-Baked Smoked Cheeseburger Queso Dip

Fox 13's viral party dip - bacon and ground beef baked with RoTel, mustard, Worcestershire, and liquid smoke into a gooey three-cheese queso loaded with chopped dill pickles. Smoky cheeseburger in dip form.

Ingredients

  • 1 lb thick-cut bacon
  • 1 1/2 lb ground beef
  • 2 (10-oz) cans RoTel diced tomatoes and green chiles
  • 3 tbsp yellow mustard
  • 2 tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • 32 oz Velveeta cheese, cubed
  • 8 oz sharp cheddar cheese, shredded
  • 8 oz pepper jack cheese, shredded
  • 1 cup chopped dill pickles

Instructions

  1. Cook the bacon in a large skillet over medium heat until browned and crisp; drain on paper towels and chop into bite-sized pieces, reserving a handful for garnish.
  2. Drain the excess fat and brown the ground beef in the same skillet over medium-high until fully cooked; drain the grease. Whisk together the RoTel, yellow mustard, Worcestershire, and liquid smoke in a small bowl.
  3. Preheat the oven to 350 F. Spread the Velveeta, sharp cheddar, and pepper jack in an even layer in a 9x13 foil pan. Top with the drained beef, chopped bacon, and chopped dill pickles, then pour the RoTel mixture evenly over all.
  4. Bake uncovered 10 minutes, stir vigorously to mix the melted cheese with the meats, then return to the oven 10-15 minutes more until hot and bubbling. Sprinkle the reserved bacon over the top and serve immediately with chips.
