How Sweet Eats' weekend treat - tender banana-bread muffins stuffed with a gooey dollop of Nutella and baked until melty. Like a mini chocolate lava cake in banana-bread muffin form.
Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
2 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup avocado or canola oil
2 tsp vanilla extract
1 cup mashed bananas (about 2 large or 3 medium)
1 cup Nutella
Instructions
Preheat the oven to 375 F and line a muffin tin with liners. Whisk together the flour, baking soda, baking powder, cinnamon, and salt in a bowl.
In a large bowl, whisk the eggs and sugars until combined. Whisk in the oil, vanilla, and mashed bananas, then stir in the dry ingredients with a spoon until just combined - do not overmix.
Fill each liner about 3/4 full and add about 1 tablespoon of Nutella to each muffin, swirling it into the batter (it will sink as it bakes).
Bake 18-20 minutes until set in the center. Let cool slightly - the Nutella center will be hot - and serve warm with extra Nutella on top.
