Bon Appetit's viral side — halved brussels sprouts roasted cut-side down on a bed of grated Parmesan that melts into a lacy, crispy, frico-like cheesy crust.
Ingredients
1 1/2 lb brussels sprouts, trimmed and halved
3 tbsp extra-virgin olive oil
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
4 oz store-bought grated Parmesan
nonstick vegetable oil spray
Instructions
Toss the halved brussels sprouts with olive oil, salt, and pepper in a bowl.
Scatter grated Parmesan in an even layer on a parchment-lined, sprayed baking sheet, leaving a 1/2-inch border.
Arrange the sprouts cut-side down in a single layer on top of the cheese; bake at 400 F until sprouts are tender and cheese is deep golden, 20-28 minutes.
Cool at least 5 minutes, then break into pieces to serve.
