Ingredients
Nonstick vegetable oil spray
1 1/4 cups all-purpose flour (for streusel)
1 cup packed light brown sugar
1 1/2 tsp ground cinnamon
1/2 tsp baking powder
1/2 cup unsalted butter, melted (for streusel)
1 lb Honeycrisp apples, peeled, cored, and sliced
1 2/3 cups all-purpose flour (for cake)
1 cup granulated sugar
1/2 cup chilled unsalted butter, cut into pieces
2 large eggs
2/3 cup buttermilk
2 Tbsp vegetable oil
1 Tbsp vanilla extract
Powdered sugar for dusting
Instructions
Preheat oven to 350F. Line an 8x8 pan with parchment, spray with oil. Mix streusel ingredients (flour, brown sugar, cinnamon, baking powder, melted butter) until marble-size clumps form. Set aside.
Toss apple slices with 2 Tbsp flour to coat. Set aside.
Whisk granulated sugar, 1 2/3 cups flour, salt, baking powder, and baking soda. Cut in chilled butter until sandy. Add eggs, buttermilk, oil, and vanilla; stir until no dry pockets remain. Fold in two-thirds of apples.
Scrape batter into pan, top with streusel and remaining apples. Bake 65-75 minutes until a tester comes out clean. Cool in pan, dust with powdered sugar, cut into 12 pieces.
