Broiled Hot Honey Salmon with Cucumber Salad

ATK's viral 2026 favorite — skin-on salmon fillets glazed with a sticky honey-hot sauce blend and broiled until beautifully caramelized, served over fluffy rice with a bright cucumber, cilantro, and shallot salad.

Ingredients

  • 1 cup long-grain white rice
  • 1 1/2 cups plus 1 tsp water, divided
  • 1/3 cup honey
  • 1/3 cup hot sauce
  • 2 tsp table salt, divided
  • 1 tsp garlic powder
  • 1/8 tsp cayenne pepper (optional)
  • 1/2 tsp cornstarch
  • 4 (6-oz) skin-on salmon fillets
  • 2 tbsp white wine vinegar
  • 1 English cucumber, halved and sliced 1/4-inch thick
  • 1/3 cup fresh cilantro leaves
  • 1 shallot, halved and sliced thin

Instructions

  1. Rinse rice and cook with 1 1/2 cups water: bring to a boil, reduce to low, cover, and cook 15 minutes until tender. Keep warm.
  2. Whisk honey, hot sauce, 1/2 tsp salt, garlic powder, and cayenne. Reserve 1/4 cup for serving. Combine cornstarch with 1 tsp water, stir into remaining glaze, and microwave until thickened, about 1 1/2 minutes. Cool 5 minutes.
  3. Adjust oven rack 6 inches from broiler and heat broiler. Line a baking sheet with foil, pat salmon dry, season with 1/2 tsp salt, and brush with glaze.
  4. Broil salmon 10-12 minutes, brushing with glaze and rotating halfway, until medium-rare (125F).
  5. Whisk vinegar and remaining 1/2 tsp salt. Toss with cucumber, cilantro, and shallot. Serve salmon over rice with cucumber salad and reserved sauce.
