Spicy Chicken Fried Rice

America's Test Kitchen's most popular 2026 recipe — tender chicken thighs, crisp sugar snap peas, and day-old rice stir-fried with serrano chiles, chili-garlic sauce, and a bright finish of sesame oil and rice vinegar.

Ingredients

  • 3 large eggs
  • 1/2 tsp table salt, divided
  • 3 tbsp vegetable oil, divided
  • 12 oz boneless skinless chicken thighs, cut into 1/2-inch pieces
  • 6 oz sugar snap peas, cut into thirds
  • 4 scallions, whites and greens separated and sliced thin
  • 3 garlic cloves, minced
  • 1-2 serrano chiles, sliced thin
  • 4 cups cooked long-grain white rice, room temperature
  • 2 tbsp soy sauce
  • 1 tbsp chili-garlic sauce
  • 1 tsp toasted sesame oil
  • 1 tsp unseasoned rice vinegar

Instructions

  1. Beat eggs with a pinch of salt. Heat 1 tsp oil in a wok over medium-high heat and cook eggs, stirring, until just set. Transfer to a plate.
  2. Add 1 tsp oil to the wok, season chicken with 1/4 tsp salt, and cook until browned and cooked through, 4-5 minutes. Transfer to the plate with eggs.
  3. Add 1 tsp oil and cook sugar snap peas until bright green and crisp-tender, 1-2 minutes. Transfer to the plate.
  4. Add remaining oil, scallion whites, garlic, and serranos; cook until fragrant, 1 minute. Add rice and remaining salt, stir-frying until heated through, 2-3 minutes.
  5. Stir in soy sauce and chili-garlic sauce. Return eggs, chicken, and snap peas to the wok with scallion greens; toss until warmed through. Remove from heat, stir in sesame oil and rice vinegar, and serve.
