Cheesy French Onion Skillet White Beans

Serious Eats' most-saved recipe of the week — one-skillet white beans inspired by French onion soup. Caramelized onions and creamy butter beans topped with toasted baguette and melted Gruyere, then broiled until bubbling golden.

Ingredients

  • 4 tbsp unsalted butter
  • 1 1/4 lbs yellow onions, thinly sliced
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 6 oz baguette, cubed
  • 2 cloves garlic, thinly sliced
  • 1 tsp fresh thyme leaves
  • 2 tbsp dry sherry
  • 2 cans (16 oz each) butter beans, drained
  • 1 3/4 cups beef or chicken stock
  • 4 oz Gruyere cheese, shredded
  • 1 oz Parmigiano-Reggiano, grated

Instructions

  1. Melt butter in a large skillet over medium-high heat. Add onions, salt, and pepper; cook until softened, 6-8 minutes. Reduce heat to medium-low and cook, stirring frequently, until deeply caramelized, about 45 minutes.
  2. Meanwhile, toast bread cubes on a baking sheet at 400F until lightly toasted, 8-10 minutes.
  3. Add garlic and thyme to the onions; cook until fragrant, about 1 minute. Add sherry and scrape up browned bits; cook 1-2 minutes.
  4. Add beans and broth; bring to a simmer and cook until slightly thickened, about 7 minutes. Top with toasted bread, Gruyere, and Parmigiano-Reggiano; broil until cheese is melted and browned, about 2 minutes.
