Ingredients

Set Instant Pot to Saute. Add oil, onion, and garlic. Cook 3-4 minutes until fragrant.
Transfer onion and garlic to a blender. Add diced tomatoes, chipotle peppers, adobo sauce, cumin, salt, and chicken broth. Blend until smooth.
Pour sauce back into the Instant Pot. Add chicken and secure lid.
Pressure cook on High for 9 minutes. Quick release.
Remove chicken and shred. Return to pot and stir with sauce.
Serve with cauliflower rice or in lettuce wraps. Top with avocado, onion, and cilantro.
