Lasagna Beans (Cheesy White Bean-Tomato Bake)

Serious Eats' weeknight viral hit -- all the gooey, cheese-pull satisfaction of lasagna with zero noodles or layering. Creamy butter beans simmered in garlicky tomato sauce, topped with ricotta, mozzarella, and Parmesan, then broiled golden.

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 1 lb mild Italian sausage, casings removed (optional)
  • 1 medium yellow onion, chopped
  • 6 garlic cloves, finely chopped
  • 1 tbsp tomato paste
  • 2 tsp Italian seasoning blend
  • 1/4 tsp crushed red pepper flakes
  • 1 (28 oz) can crushed tomatoes
  • 2 (16 oz) cans butterbeans, drained and rinsed
  • 1 tsp kosher salt
  • 1/2 cup whole-milk ricotta cheese
  • 1.5 cups shredded low-moisture mozzarella cheese
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large broiler-safe skillet over medium-high. Brown the sausage, breaking it into chunks, 5 to 7 minutes. Transfer to a bowl, leaving the drippings behind.
  2. Add the onion and cook until softened, about 5 minutes. Add the garlic, tomato paste, Italian seasoning, and red pepper flakes; cook until fragrant and the paste darkens, about 2 minutes.
  3. Stir in the crushed tomatoes, butterbeans, salt, and the reserved sausage. Simmer 5 to 10 minutes until slightly reduced and the flavors meld. Remove from heat.
  4. Dollop the ricotta over the top, then sprinkle with the mozzarella and Parmesan. Broil on high, about 6 inches from the element, until the cheese is bubbly and golden, about 5 minutes. Garnish with fresh basil and serve with crusty bread.
