Mississippi Mud Pie Dessert Bars
Serious Eats' most-saved dessert this week -- classic Mississippi mud pie reimagined as neat, sliceable bars with four layers: a chocolate cookie crust, fudgy brownie, airy chocolate mousse, and whipped cream.
Ingredients
- Cooking spray
- 18 oz chocolate sandwich cookies, such as Oreos (about 45 cookies)
- 3/4 tsp kosher salt
- 12 tbsp unsalted butter, melted (for the crust)
- 1 cup bittersweet chocolate chips (for the brownie)
- 1/2 cup vegetable oil
- 6 tbsp unsalted butter, cut into pieces (for the brownie)
- 3 large eggs, at room temperature
- 1 cup granulated sugar
- 1 tbsp vanilla extract
- 2/3 cup all-purpose flour
- 1/4 cup Dutch-process cocoa powder
- 1.5 cups bittersweet chocolate chips (for the mousse)
- 3.5 cups heavy cream, chilled
- 1/2 cup confectioners' sugar
- Chocolate shavings, for serving
Instructions
- Preheat oven to 350F. Line a 9x13 pan with foil and spray with cooking spray. Crush the cookies to fine crumbs, mix with 3/4 tsp salt and 12 tbsp melted butter, press firmly into the pan, and bake 10 minutes.
- For the brownie layer: melt 1 cup chocolate chips with the oil and 6 tbsp butter. Beat eggs and sugar until pale and tripled in volume, then fold in the chocolate, vanilla, salt, flour, and cocoa. Pour over the crust and bake until just set.
- For the mousse: whisk egg yolks, sugar, and water over simmering water to 145F, then fold in melted chocolate and butter and cool. Whip the cream with confectioners' sugar and vanilla, fold into the chocolate base, and spread over the cooled brownie.
- Chill until fully set, then slice into bars and top with whipped cream and chocolate shavings.
