5 pita bread pockets, cut in half
1 pound ground lamb or beef
0.5 brown onion, grated
2 garlic cloves, finely grated
1 tablespoon finely chopped parsley
3 teaspoons ground coriander
3 teaspoons ground cumin
1.5 teaspoons smoked paprika
0.75 teaspoon ground allspice
0.5 teaspoon cayenne pepper
1.25 teaspoons salt
Olive oil spray
Instructions
Grate the onion using a box grater into a bowl, keeping all the juices.
Add the ground meat, garlic, parsley, coriander, cumin, smoked paprika, allspice, cayenne, and salt. Mix well with your hands.
Divide the mixture into 10 portions and flatten each into a thin semi-circle slightly smaller than a pita half.
Gently open each pita pocket and place a portion of meat inside. Close and press to spread the meat to the edges.
Spray both sides of the stuffed pita with olive oil. Pan-fry in a large skillet over medium-high heat for 2 minutes on each side until golden and crispy. Keep warm in a low oven while cooking the rest.
