Ingredients
1 (12-ounce) can Spam, cut into 8 slices
2 tablespoons soy sauce
2 tablespoons sugar
3 cups cooked sushi rice
3 sheets nori (seaweed), cut in thirds
2 teaspoons furikake (optional)
Instructions
In a small bowl, combine the soy sauce and sugar to make the glaze.
In a large skillet over medium-high heat, cook the Spam slices for 3 to 5 minutes until browned on both sides.
Pour the soy-sugar glaze over the Spam and cook for 1 to 2 minutes until the slices are coated and glazed. Remove from the pan.
Place about 1/3 cup of rice into a musubi press or a plastic-lined Spam can. Press down firmly, then sprinkle with furikake if using.
Top the rice with a glazed Spam slice. Wrap a strip of nori around the rice and Spam, moistening one end to seal. Repeat with the remaining ingredients.
