Instant Pot Beef Tips with Gravy

Fork-tender beef tips in a rich, savory gravy. Perfect served over mashed potatoes or egg noodles.

Ingredients

  • 2 lbs beef stew meat or sirloin tips, cut into 1-inch cubes
  • 1 cup beef broth
  • 1 large onion, diced
  • 8 oz sliced mushrooms
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Fresh parsley, chopped

Instructions

  1. Set Instant Pot to Saute and add olive oil. Season beef with salt and pepper, then brown in batches. Remove and set aside.
  2. Add onion and mushrooms to the pot. Cook 5 minutes until softened. Add garlic and cook 1 minute.
  3. Pour in beef broth to deglaze, scraping up browned bits. Add Worcestershire sauce, soy sauce, thyme, and onion powder.
  4. Return beef to pot. Secure lid, set valve to Sealing, and pressure cook on High for 25 minutes.
  5. Allow natural release for 10 minutes, then quick release.
  6. Set to Saute. Mix cornstarch with cold water and stir into the pot. Cook 2 minutes until gravy thickens. Garnish with parsley and serve over mashed potatoes or egg noodles.
