The viral TikTok casserole that everyone's making - chicken and rice baked in salsa, smothered in melted cheese, and topped with warm queso until it literally swims.

Ingredients
2 packets Knorr Rice Sides Mexican Rice
3 cups chicken broth
1 jar (16 oz) salsa, any variety
2-3 cups cooked shredded chicken (rotisserie works great)
1 packet taco seasoning
2 cups shredded Colby Jack or fiesta blend cheese
2 cups (16 oz) prepared queso dip
1 can corn, drained (optional)
1 can black beans, rinsed and drained (optional)
Tortilla chips for serving
Instructions
Preheat oven to 350F and spray a 9x13-inch baking dish with non-stick cooking spray.
Combine the uncooked rice packets, chicken broth, salsa, taco seasoning, and shredded chicken (and corn and/or black beans if using) directly in the baking dish. Stir well to combine.
Top the mixture evenly with the shredded cheese. Cover the baking dish tightly with aluminum foil.
Bake for 45 minutes until the rice is tender and the liquid is fully absorbed. Near the end of baking, heat the queso dip until warm and spreadable.
Remove the foil and spread the warmed queso evenly over the top. Serve with tortilla chips for scooping.
