6 ounces graham cracker sheets (12 to 13)
11 tablespoons unsalted butter, divided
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
3/4 cup plus 2 tablespoons creamy peanut butter, divided
1 1/4 cups semisweet chocolate chips
Chopped salted peanuts (optional garnish)
Instructions
Seal the graham cracker sheets in a large zip-top bag. Use a rolling pin to crush them until finely ground (about 1 1/3 packed cups of crumbs).
Microwave 10 tablespoons of the butter in a large bowl until melted, 1 to 2 minutes. Stir in the powdered sugar, vanilla, 3/4 cup peanut butter, and graham cracker crumbs until well combined.
Line an 8x8-inch baking pan with foil, leaving an overhang. Press the graham cracker filling into an even layer in the pan.
Microwave the chocolate chips, remaining 2 tablespoons peanut butter, and remaining 1 tablespoon butter until melted and smooth. Spread evenly over the filling. Garnish with peanuts if using.
Chill uncovered until set, about 1 hour. Lift out using the foil, slice into 16 bars, and serve.
